National Cupcake day

What a better way the spending a day dedicated to cupcakes, than baking them! If you love a good bake then this is the perfect opportunity! Ingredients (makes 12): 110g softened butter 110g caster sugar 2 large eggs 1/2tsp vanilla extract 110g self-raising flour


for the buttercream: 100g softened butter 300g icing sugar 1tsp vanilla extract food colouring (optional)


equipment: 12 bun case tray 12 bun cases 1 large bowl 1 small bowl 1 electric whisk 1 piping bag 1 piping nozzle of your choice


method: pre-heat the oven to 180 degrees/160 degrees-fan/ gas 4, and put the bun cases into the bun tray. using the electric whisk beat the softened butter and caster sugar together until the mixture is pale and fluffy. When done, add the eggs in one at a time and mix them each while making sure to get all of ingredients by wiping down the sides of the bowl. add the vanilla extract and flour into the mixture and whisk together before equally distributing the mixture into the bun cases. Tap the tray gently on the side to release any air bubbles that may be trapped. bake for 15 minutes until golden brown, to make sure it is bakes all way through put a skewer into the centre of the cupcake, if it comes out clean then they are fully baked. When done take out the oven and leave on a wire rack to cool. for the buttercream; whisk the butter and icing sugar together until smooth then add the vanilla extract until combined. If your wanting to add colouring, stir in the food colouring. Then spoon or pipe the cupcake and decorate how you like.
